As a Prek teacher, the life cycle of a butterfly is a lesson imbedded into the curriculum. When watching the video I loved to see how the student gave very specific instruction to how his classmate could create a more accurate representation of his drawing. When thinking about a criterion-based assessment, I want to see that my students understand the four phases: egg, larva (caterpillar), pupa, adult.
My interim assessment, especially when working with 3/4 yr olds, would provide different manipulatives and mediums. For example, I would check in after each phase of the butterfly in the lesson. "Create a caterpillar." Students can used whiteboards and markers, tissue, play dough, tiles, etc. If they can show me each phase represented and in the correct order then I know they have achieved the specific learning target.
